Bush Food Ingredients List

Our ingredients are sourced from indigenous growers and wild harvesters as well as non-indigenous growers and wild harvesters from all around Australia.  Our aim is to work together harmoniously to achieve a common good. Our prices are set upon the receipt of each shipment with our per kg prices representing our B2B Pricing.  We aim to fill orders in a timely manner subject to availability.

  • BURDEKIN PLUM - ground - taste ranges from mild, sweet-tart to tart.
  • BUSH APPLE
  • BUSH TOMATO - crushed or whole - a strong sun dried tomato with a caramel/ tamarillo flavour and aroma. Unfortunately in short supply for some time
  • CINNAMON MYRTLE - Flakes or Ground - a spicy cinnamon-like aroma & flavour.
  • CRYSTAL ICE PLANT Ground
  • DAVIDSONS PLUM - Freeze Dried & Ground - adds a delicious tang to icecream, sorbet, biscuits, muffins and cakes
  • DESERT LIME - Freeze Dried & Ground - an intense, piquant flavour.
  • DESERT OAK -  raw whole or roasted & ground - a coffee-like aroma and peanut butterish like taste

  • FINGER LIME - Freeze Dried & Ground - its salty bitterness marries well with seafood.
  • GERALDTON WAX - Flakes - adds a citrusy flavour (think Kaffir Lime)

  • GUMBI GUMBI - Whole & broken leaf - a bitter tasting thin leaf generally drunk as a tea.

  • KAKADU PLUM - Freeze Dried & Ground - generally added to smoothies and fresh juice because of its Vitamin C.

  • KURRAJONG roasted seeds can be eaten, ground as a coffee substitute
  • LEMON ASPEN - Freeze Dried & Ground adds a uniquely Australian lemon flavour 'boost' in your cooking.
  • LEMON MYRTLE - Flakes or Ground - a fresh fragrance of creamy lemon and lime
  • LEMON SCENTED GUM - Flakes - an amazing, strong lemon fragrance.
  • LEMON SCENTED TEA TREE whole leaf & flakes Eucalyptus and lemon aroma
  • MACADAMIA NUT - dry roasted creamy, slightly sweet and finishes with a slightly salty taste
  • MANUKA LEAF - whole leaf - unique, slightly bitter taste
  • MUNTRIES Freeze Dried & Ground or whole used anywhere that you would use apples or sultanas
  • NATIVE BASIL - Flakes - a fragrant mix of basil, mint and sage flavours.
  • NATIVE BLOOD LIME - Freeze Dried & Ground - a cross between an acid mandarin and a red finger lime.
  • NATIVE CURRANT - whole berry - flavour is best when mixed with sugar to remove the acidity.
  • NATIVE JUNIPER - whole berry -an unique mild juniper like flavour
  • NATIVE LEMON GRASS - Flakes - a calming and soothing effect on digestion and stress.
  • NATIVE RASPBERRY Freeze dried whole & crumble taste like white mulberry. 
  • NATIVE TAMARIND
  • NATIVE THYME - Flakes - incredibly intense spicy mint flavour
  • PAPERBARK Hand cut sheets approx. 40 x 40cm - wrapping food in it brfore ooking imparts a smokey flavour.
  • PEPPERBERRY - Whole or ground - a berry with bite
  • PEPPERLEAF - Flakes or Ground - a softer version of the berry.
  • PEPPERMINT GUM - Flakes or Ground - its minty overtones are excellent in tea.
  • QUANDONG - dried halves - somewhat tart but highly nutritious.
  • QUANDONG SEED - contains an oil rich kernel which you can roast to create yummy quandong flour.
  • RIBERRY (aka LilliPilly) - whole dried or ground - Slightly tart with a cinnamon spicy flavour
  • RIVER MINT - Flakes - a subtle native herb which has the taste and aroma of spearmint.
  • ROSELLA - Flakes - a tart flavour with a raspberry/rhubarb/plum quality.
  • SALTBUSH - Flakes - A low sodium alternative.
  • SALTBUSH SEED a soft texture with a salty herb flavour
  • SANDALWOOD - Unfortunately not readily available.
  • SEA BLITE - Ground
  • SEA PARSLEY - Flakes - adds a fresh ocean taste
  • STRAWBERRY GUM - Flakes or Ground - a highly aromatic leaf.
  • SUNRISE LIME - Powder - A soft citrus flavour
  • WARRIGAL GREENS - Ground
  • WATTLESEED - roasted ground or whole - a nutty, mild coffee flavour.
  • WHITE KUNZEA - Flakes a fragrant tiny leaf with hints of eucalypt and citrus
