Easy and flavoursome recipe:
Rub over both sides of 500gm chicken thigh fillets and allow to sit at room temperature for 30 minutes. Bake in preheated oven (180C) until cooked through... approx 30 to 40 minutes
Vegetarian alternative:
Fry 650gm diced sweet potato and cauliflower in a little oil with the Rub mix. Add 400gm drained chickpeas, 400gm can diced tomato and 2 cups vegetable stock. Simmer until tender and add 1/4 cup cream before serving.
