Strawberry gum (Eucalyptis Olida or Forestberry) is used to enhance the flavour of cooked fruit dishes, desserts or spiced jams, bringing out the classic 'berry' flavour. The tree occurs naturally in northern New South Wales but is cultivated as far south as Tasmania. Regional variation in taste should be expected.
A mild strawberry/eucalyptus flavour, with strawberry aroma. Use to flavour sweet breads or scones.

Strawberry Gum
I was quite unfamiliar with this product and have been experimenting with it. The product itself is fresh and pungent and I used it with White Kunzea for a tea which is soft and refreshing.
