Wild Finger Lime (Citrus Caviar) is an exquisite rainforest fruit.

Lime crystals explode in your mouth, giving a unique lime sensation.

Finger Limes can be used in many ways, Salads, Seafood, Pasta, Curry, Sushi, Sashimi, Deserts and Cocktails

Available  500gm or by the kg.  Express postage is calculated to include a cooler box with ice or you may choose to pickup from our base. 

Wild Lime Syrup

Place a cup of water and 1 1/4 cups sugar into a heavy-based saucepan and heat until the sugar has dissolved.
Add 1/4 cup finger limes and bring to the boil.
Lower heat and simmer gently until the volume is reduced by a third (about an hour).
Remove from the heat and strain through a fine sieve.
Transfer to sterile jars or bottles. It will keep for approx 12 months.

Note: The longer the syrup is reduced, the darker it will become and the flavour will intensify.
Different batches can be reduced to different strengths and are delicious served together.




THESE INGREDIENTS ARE EITHER FROZEN OR PICKED FRESH ON THE DAY OF DESPATCH.  For optimum freshness we recommend that you arrange pick up either personally from our head office on the outskirts of Brisbane or alternatively arrange your own refrigerated transport.or with a refrigerated courier.

Australia Post Express service is the only service available to us.  Frozen produce will defrost in transit and you accept that you will receive fully or partially thawed produce.  

To achieve the best outcome we will hold postage until Monday/Tuesday to ensure your order is not sitting over a weekend.   

Once we have despatched your order, we are no longer responsible for it and do not accept any liability for any deterioration of, loss of or damage to your order which may occur between despatch by us and delivery to you. A tracking number is sent by email and you are expected to monitor the parcel's progress as all responsibility rests with the receiver after the goods have left our premises.  Post office boxes as delivery addresses are not recommended.

It is best to arrange delivery of these ingredients as near as practical to when you are going to work with them and it is advisable for you to monitor its s journey via Australia Post's online tracking facility so that you can arrange for collection.

    these are excellent to have in the fridge (somewhat like preserved lemons) & to scrape out the pellets/globules of intense citrus to use as last minute sprinkles of flavour.

    Great Service but not quite the product I had intended..

    Although called "pink finger limes" the inside was clear. Maybe in the product description there should be some information regarding the colour of the inside and how it may not quite match the description.

    The service on the other hand was exceptional. I appreciate all the help on such short notice.
