Certified organic  Finger Lime (Citrus Caviar) is an exquisite rainforest fruit.

Lime crystals explode in your mouth, giving a unique lime sensation.

Finger Limes can be used in many ways, Salads, Seafood, Pasta, Curry, Sushi, Sashimi, Deserts and Cocktails.  I LOVE them in a fruit salad!!

 

Finger Lime Caviar Butter

Cut 4 finger limes in half and squeeze out the tiny caviar pearls into a bowl and set aside.
Finely slice the skin of one finger lime.
In a small saucepan, whisk 2 eggs and then add 100ml lime juice, 200gm sugar, sliced finger lime skin and 55gm butter . Heat on low. 
It will take about 20 minutes total to heat up the mixture slowly and thicken it. Stir frequently so that it doesn't catch on the bottom of the saucepan.
When the butter is ready, smooth and thick stir in the reserved tiny caviar pearls. Transfer to a sterilised jar.

Wild Lime Syrup

Place a cup of water and 1 1/4 cups sugar into a heavy-based saucepan and heat until the sugar has dissolved.
Add 1/4 cup finger limes and bring to the boil.
Lower heat and simmer gently until the volume is reduced by a third (about an hour).
Remove from the heat and strain through a fine sieve.
Transfer to sterile jars or bottles. It will keep for approx 12 months.

Note: The longer the syrup is reduced, the darker it will become and the flavour will intensify.
Different batches can be reduced to different strengths and are delicious served together.

Australia Post Express service is the only service available to us.  Frozen produce will defrost in transit and you accept that you will receive fully or partially thawed produce.  

To achieve the best outcome we will hold postage until Monday/Tuesday to ensure your order is not sitting over a weekend.   

Once we have despatched your order, we are no longer responsible for it and do not accept any liability for any deterioration of, loss of or damage to your order which may occur between despatch by us and delivery to you. A tracking number is sent by email and you are expected to monitor the parcel's progress as all responsibility rests with the receiver after the goods have left our premises.  Post office boxes as delivery addresses are not recommended.

It is best to arrange delivery of these ingredients as near as practical to when you are going to work with them and it is advisable for you to monitor its s journey via Australia Post's online tracking facility so that you can arrange for collection.
