Bush Tomato Pasta Sauce

Cook half a roughly diced onion in a saucepan on low heat with a little oil for 3-5 minutes until soft and little colour.

Add 2 cloves finely chopped garlic and cook for a further 2 minutes stirring regularly.

Add 200ml white wine and cook until wine reduces to a third of original volume.

Add a can of tomatoes, 75ml white vinegar, 3 Tbspns sugar, tspn NATIVE THYME, 2 bay leaves and 10gm crushed BUSH TOMATO and cook on low heat for 15-20 minutes until it resembles a chunky sauce. Stir vigorously.

Add salt and pepper to taste and cool before using. Remove bay leaves
