THESE INGREDIENTS ARE FROZEN. For optimum freshness we recommend that you arrange pick up either personally from our head office on the outskirts of Brisbane or alternatively arrange your own refrigerated transport or with a refrigerated courier.
Should you choose to use Australia Post Express service we have available to us then it will be on the understanding that although we take as much care as possible Frozen produce will defrost in transit and you accept that you will receive fully or partially thawed produce.
To achieve the best outcome we will hold postage until Monday/Tuesday to ensure your order is not sitting over a weekend.
Once we have despatched your order, we are no longer responsible for it and do not accept any liability for any deterioration of, loss of or damage to your order which may occur between despatch by us and delivery to you.
It is best to arrange delivery of these ingredients as near as practical to when you are going to work with them and it is advisable for you to monitor its s journey via Australia Post's online tracking facility so that you can arrange for collection.
Bunya Nut Munducklin Curry.
Place 2 Tbspns Oil in a pan, add 1 diced onion, 1 diced garlic clove. Cook until translucent but not brown. Add 400gm chicken tenderloins and sear all sides. Then add 2 Tbspns Munducklin Curry Powder and 1 x 400gm can tomatoes. Bring to the boil and then simmer for 20 mins. Then add 100gm cooked/peeled half bunya nuts near the end. Nuts stay moist and delicious.
Garlic Butter Bunyas
Lighty fried pieces in garlic butter.
Bunya Nut Pesto
Gently heat 2 tspns ground Pepperberry in 100ml of Macadamia or Olive Oil. Set aside.
Finely chop 100gm Bunya Nuts and mix nuts with 1 finely chopped clove of garlic and 100ml of Macadamia or Olive Oil.
Roughly chop a bunch of fresh basil in a food processor or blender with 50 ml Macadamia or Olive Oil. Process for one minute, and then add the Bunya Nut mix and the Pepperberry mix and 50gm grated Parmesan Cheese. This works best if the oils are poured in a steady stream. Do not over-process. This should keep in the refrigerator for a week – if it lasts that long!

The Bunya Nut (Araucaria bidwillii) is native to south-eastern Queensland especially the Bunya Mountains National Park.
The nuts (seeds) can be eaten raw when fresh, but it is a lot easier to boil the seed pods to extract the nut. The nuts can then be roasted, sliced or pureed and used in desserts and savoury dishes and spreads. The nuts can also be milled to a flour and then used in various doughs.
Bunya nuts can also be blended with honey to make a nice spread for toast.
